Kabinett - According to the German wine law, the Kabinett wine is the first level of the predicate wines or quality wine with predicate, vinified from ripe grapes and, depending on the grape variety and growing region, with a certain degree of ripeness. For our palate it is a fruity temptation that is already drunk after the first half of a football game. The best qualities are balanced with fine tartaric acid or with a little crunchy malic acid. A little residual glycose on the palate still brings sensory cooling moments. Kabinettwein can be vinified from all grapes approved in Germany. The Öchsle grade achieved by the grapes is essential. The degree of Öchsle is the yardstick for the amount of sugar in the must, which later determines the degree of alcohol. Since the sugar is never completely fermented in residual sweet wines, a residual sugar content remains in the wine. This residual sugar is usually over 20 grams per liter and ensures a fine drinking pleasure. This style of wine made German wine world famous at the beginning of the 19th century. On the wine lists of the most feudal hotels in the world, whether in New York or St. Moritz, you could find residual sweet Rieslings from the vineyards of Bernkasteler Doctor, Wehlener Sonnenuhr or Erdener Prälat.
