Kabinett - According to the German wine law, the Kabinett wine is the first level of the predicate wines or quality wine with predicate, vinified from ripe grapes and, depending on the grape variety and growing region, with a certain degree of ripeness. For our palate it is a fruity temptation that is already drunk after the first half of a football game. The best qualities are balanced with fine tartaric acid or with a little crunchy malic acid. A little residual glycose on the palate still brings sensory cooling moments. Kabinettwein can be vinified from all grapes approved in Germany. The Öchsle grade achieved by the grapes is essential. The degree of Öchsle is the yardstick for the amount of sugar in the must, which later determines the degree of alcohol. Since the sugar is never completely fermented in residual sweet wines, a residual sugar content remains in the wine. This residual sugar is usually over 20 grams per liter and ensures a fine drinking pleasure. This style of wine made German wine world famous at the beginning of the 19th century. On the wine lists of the most feudal hotels in the world, whether in New York or St. Moritz, you could find residual sweet Rieslings from the vineyards of Bernkasteler Doctor, Wehlener Sonnenuhr or Erdener Prälat. To be found on old food and wine lists such as Vins de Moselle, Moselle wines such as Zeltinger 1911, Brauneberger 1904, Piesporter 1911, Berncastler 1911 or Grünhäuser 1908. In the past, as now, the best leftover Riesling cabbage often come from the Mosel, Rheingau and Nahe regions. The cool climate and the long ripening period suit this style, with the exception of 2018. The perfect cabinet style is a successful balance of sweetness and acidity, low alcohol, in youth with aromas of apple, peach and pineapple, in old age with a fine aging note of petrol, less sweetness and dark aromas such as milk chocolate. The wines are quite capable of aging. The top qualities shine with their density and a long, aromatic finish.
