Due to the sinking and the faults of the Rhine Graben as well as the strong uplift of the Palatinate Forest, very different soil conditions can be found in the area around Siebeldingen. From very old and usually quite deep geological formations, such as Rotliegend, Buntsandstein or shell limestone, to very "young" soils such as hillside gravel or loess. Our Chardonnay vines grow on loess and shell limestone soils in and around Siebeldingen. Loess was blown as very fine dust and collected in layers of different thicknesses in depressions. This happened until the last Ice Age (Würm), which ended 10,000 years ago. Loess is an ochre-colored, very calcareous silt. The high lime content in the soil is the best prerequisite for great Chardonnay and Burgundy/Pinot!
viticulture
Three years before Chardonnay was approved as a grape variety in Germany in 1991, we planted our first vines as the first official experimental cultivation in Rhineland-Palatinate. The grape variety is excellent for our climate and soil. And it is one of the highest quality white wine grapes in the world.
Since 2006 all our vineyards have been cultivated organically. In doing so, we not only promote the complex, biodynamic interactions of the species-rich "vineyard ecosystem", but also create more individuality in the wine. Biodynamic cultivation also ensures sustainability and preserves the extraordinary biodiversity in the incomparable wine-cultural landscape of the Palatinate. Some of our vines were planted in the 1980s and are therefore among the oldest Chardonnay vines in Germany. Old vines are a prerequisite for GREAT wines, so we spend a lot of time tending our old plots and keeping our old vines young and vital.
vinification
The grapes were harvested by hand, destemmed, mashed and, after a 24-hour maceration, the juice was gently extracted. After the preliminary clarification by means of natural sedimentation, the fermentation took place in mostly new barrique barrels made of French and Palatinate oak. After 9 months of storage and aging in barrels on the full lees, racking and bottling took place in July 2021.
wine
Fresh wines have a distinctive scent of melons, exotic fruits and overripe gooseberries. Barrel aging complements this spectrum of scents with vanilla, nuts, dried fruit and subtle hints of yeast. It is a REBHOLZ top wine with great development potential, which, like all great Chardonnays, will only reach its perfect drinking maturity in a few years.
