Sommeliers Mature Bordeaux/Chardonnay
Tastings have demonstrated the incredible aging potential of classified Bordeaux wines. Even wines that were bottled and perfectly stored a hundred or more years ago are still in excellent condition today. In good years, the late-ripening grape varieties with their small, thick-skinned berries produce extremely dense wines with massive tannins, which require a long bottle storage period in order to be drinkable and enjoyable. Mature wines are distinguished by the fact that they taste better than they smell. The bouquet notes are reminiscent of mushrooms and forest floor. Sometimes the scents can also be more severe. Glasses that are too large would overemphasize these aromas. For this reason, we recommend a medium-capacity glass for the pleasures of the palate. It concentrates the ripe fruit, gives the wine spice through the acidity and shows the remaining tannin lively.
