Extra ripe grapes are picked during the selection. The berries are carefully selected. Hand-picking is not mandatory, but it cannot be handled differently when it is not in use. Some producers use a full harvester and later select the berries by hand. Compared to the late harvest, the style of a selection is denser and more mature in terms of taste. Readouts can also be expanded dry and then have the appropriate addition dry on the label. But the most delicate and also the most famous German Auslese are fruity-sweet and sometimes characterized by a certain proportion of the noble mushroom Botrytis, often made from the Riesling grape variety and endowed with a unique balance between sweetness and acidity. The minimum alcohol content is 7% vol.
