Wittmann
The Wittmanns and their ancestors have been wine-growers in the old market town of Westhofen, in southern Rheinhessen, since 1663, when wine-making was first mentioned in the family. From this long tradition, the winery developed into its present form with around 25 Hekar over the centuries. A long winemaking tradition says nothing about the quality of a winery's wines. But maybe it shows the connection with the piece of earth that you are working on.
Wittmann's vineyards have been managed organically in a controlled manner for over 18 years. The vines are deeply rooted in the living soil; this promotes the development of the terroir in Wittmann's vineyards. Intensive manual work in the vineyard serves the goal of the highest possible grape quality. Only the best Rieslings of a year bear the names of the top locations in Westhofen Aulerde, Kirschspiel, Brunnenhäuschen and Morstein. The floors of these locations are mainly characterized by clay marl with limestone deposits. In the large vaulted cellar, the gently pressed must ferments with its natural yeasts in wooden barrels. The slow fermentation and maturation in the evenly cool cellar preserves the aromas.
The philosophy of the winery: The Wittmann family have been cultivating the vineyards in an environmentally friendly manner since 1990, and the winery has been working biodynamically since 2004.
